This wonderful guacamole recipe comes from chef Thomasina Miers, the co-founder of Wahaca, the chain of Mexican restaurants.
Guacamole is the Aztec for ‘avocado’ (guac) and ‘sauce’ (mole). The secret is to use ripe avocados, and masses of fresh coriander and lime. Season well and eat, knowing that it not only tastes outrageous but is incredibly nutritious.
Chunky, gently spicy and the perfect thing for slathering onto nachos or in tortillas. Don’t leave out the salt, which is an important balance to the rich avocado.
- ½ red onion, very finely chopped
- 1-2 serrano chillies or other fresh green chillies, finely chopped
- 1-2 tsp Maldon salt
- 3 ripe Hass avocados
